For the Pie Crust:

  • 2 1/2 cups all-purpose flour
  • 1 cup cold unsalted butter, diced

  • 6-8 tablespoons ice water

For the Filling:

  • 1 lb Yukon moose meat, cubed
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 cup wild mushrooms, sliced
  • 1/4 cup all-purpose flour
  • 2 cups beef or moose broth
  • 1/2 cup wild berries (such as blueberries, lingonberries, or cranberries)
  • Salt and pepper to taste
  • 1 egg, beaten (for egg wash)
Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the all-purpose flour and salt for the pie crust. Add the cold diced butter and use a pastry cutter or your fingertips to mix until the mixture resembles coarse crumbs. Gradually add ice water, 1 tablespoon at a time, mixing until the dough comes together. Divide the dough into two equal portions, shape each into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  3. In a large skillet, heat the vegetable oil over medium heat. Add the cubed moose meat and cook until browned on all sides. Remove the meat from the skillet and set aside.
  4. In the same skillet, add the chopped onion and minced garlic, sautéing until softened and fragrant. Add the diced carrots, celery, and wild mushrooms, cooking until the vegetables are tender.
  5. Return the cooked moose meat to the skillet. Sprinkle the flour over the mixture and stir until well combined, allowing the flour to cook for a minute or two.
