Ingredients
For the Pie Crust:
- 2 1/2 cups all-purpose flour
- 1 cup cold unsalted butter, diced
- 1/2 teaspoon salt
- 6-8 tablespoons ice water
For the Filling:
- 1 lb Yukon moose meat, cubed
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 cup wild mushrooms, sliced
- 1/4 cup all-purpose flour
- 2 cups beef or moose broth
- 1/2 cup wild berries (such as blueberries, lingonberries, or cranberries)
- Salt and pepper to taste
- 1 egg, beaten (for egg wash)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the all-purpose flour and salt for the pie crust. Add the cold diced butter and use a pastry cutter or your fingertips to mix until the mixture resembles coarse crumbs. Gradually add ice water, 1 tablespoon at a time, mixing until the dough comes together. Divide the dough into two equal portions, shape each into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- In a large skillet, heat the vegetable oil over medium heat. Add the cubed moose meat and cook until browned on all sides. Remove the meat from the skillet and set aside.
- In the same skillet, add the chopped onion and minced garlic, sautéing until softened and fragrant. Add the diced carrots, celery, and wild mushrooms, cooking until the vegetables are tender.
- Return the cooked moose meat to the skillet. Sprinkle the flour over the mixture and stir until well combined, allowing the flour to cook for a minute or two.
- Gradually pour in the beef or moose broth, stirring constantly, until the mixture thickens and becomes a savory gravy. Simmer for a few minutes, then remove from heat. Season with salt and pepper to taste, and gently fold in the wild berries.
- Roll out one portion of the chilled pie dough on a lightly floured surface to fit the bottom of a pie dish. Transfer the rolled-out dough to the pie dish.
- Pour the moose meat filling into the pie dish, spreading it out evenly.
- Roll out the remaining portion of pie dough and place it over the filling. Trim any excess dough and crimp the edges to seal the pie. Cut a few slits on the top crust to allow steam to escape.
- Brush the top crust with beaten egg wash for a golden finish.
- Bake the Yukon Moose Meat Pie in the preheated oven for 40-45 minutes, or until the crust is golden brown and the filling is bubbling.
- Allow the pie to cool slightly before serving. Enjoy this hearty and flavorful Yukon Northern delicacy, infused with the rich flavors of wild game meat and forest berries.
